Step 2 (5-10 min): Season and Toss
Place the sausage and chopped vegetables on the sheet pan. Drizzle with olive oil and sprinkle with Italian seasoning, smoked paprika, salt, and pepper. Use your hands to toss everything together so all pieces are evenly coated.
3 Step 3 (10-25 min): Roast
Spread the ingredients in a single layer on the pan (no crowding) and roast in the preheated oven for 15 minutes. Remove the pan and stir or flip the pieces, then return to the oven for another 10-15 minutes, until vegetables are tender and lightly browned.
4 Step 4 (25-30 min): Add Cheese and Serve
If using Parmesan, sprinkle it over the sausage and veggies as soon as they come out of the oven. Let it melt for a minute, then serve warm. Garnish with fresh herbs or a squeeze of lemon if desired.

Note
- Even Pieces: Cutting sausage and vegetables into uniform sizes ensures they cook at the same rate.
- Give Them Space: Spread ingredients out on the pan so they roast instead of steam. If needed, use a second baking sheet.
- High Heat Roasting: Preheat the oven well to 200°C (400°F). A hot oven creates golden-brown caramelization and crispy texture.
